We are pleased to offer good quality fresh Chinese shallots, which are small and very tasty. The outer skin is brown like a normal onion, but peel back two layers and see the rich purple color of the inner layers. The white flesh of the onion is succulent. Shallots are used in a wide variety of Thai recipes found in our recipe section. We will ship you 16 oz (about two large handfulls), protected to ensure good arrival, and sent via 2 Day shipping. Size varies a bit, but they are generally 1-2 inches long, and the outer layer may show a bit of greying which is not uncommon for shallots, and is easily removed then you can use the inner flesh. Do not refrigerate, set on counter and use within 7-10 days.

Fresh Kaffir Limes
Kaffir lime peel is loaded with a fragrant citrus oil, and the flavor of the fruit is overwhelming if eaten fresh. The kaffir lime tree is grown and harvested mainly for the leaves which are a staple in Thai cooking, but the tree doesn't produce many of these limes. As kaffir limes aren't eaten fresh, and there's limited use for them, our grower typically strips the trees of all fruit each year to promote growth of the leaves. This year however we kept fruit on a few trees and now it's been harvested. The fruit not only looks excellent but the culinary appeal is perfect: fragrant, strong citrus flavor. Put a slice of the bitter peel in your mouth and your lips get a tingling sensation of citrus unlike anything you've tasted.
Kaffir lime peel is used to make Thai curry paste, by pounding it together with other ingredients in a mortar and pestle. Notice from the pictures the nice thick, white fleshy peel. This is loaded with citrus flavor and aroma. A classic Thai dish that uses kaffir limes, whole, in soup is Khanom Jin. It's also used to make candy.
Kaffir limes are used extensively in aromatherapy. Some massage oils, natural shampoos, and various herbal products call for kaffir limes but the scarcity of this fruit makes it difficult to prepare authentic versions.

Fresh Young Coconut, Product of Thailand
These coconuts are harvested before full maturity, and come full of sweet water inside which is delicious and refreshing to drink straight from the coconut using a straw. Each coconut is trimmed to look like a little house (they're round and green when harvested), then shrink-wrapped in plastic to maintain freshness in shipping. Along the walls of the coconut is a sweet white meat. Each coconut has approximately 1 cup of water and 1/2 cup of meat.
We're featuring fresh young coconut in our recipe for coconut cream pie. There are several other ways to enjoy it.
In Thailand it's common to see street vendors selling young coconuts. They crack it open in front of you with a cleaver (they are easily opened by whacking around the top), and insert a straw. A fresh drink on the sidewalk.
It's also common for people in Thailand to take one home, crack it open, drain the water into a glass, then scrape out the meat and add that to the same glass. This is then put into the freezer, to be enjoyed later as a healthy chilled beverage.
Fresh coconuts are often used in restaurants as a serving vessel. A common Thai recipe served in fresh young coconut is hor mok (fish custard). Another use for the meat is to add it to green curry. You can also stir-fry the meat and add it to red curry. Cook and/or serve your favorite Thai fried rice, seafood, or anything else in the coconut.
Young coconut juice is also known for hormone balancing properties and is a recommended part of a daily diet among post-menopausal women, and in Thailand the water is used as a component in dietary supplements.

| Lemongrass, or citronella root, is the reason Thai and Vietnamese dishes often have a compelling flavor that's not exactly lemon, but a subtle lemon perfume. It is sold by the stalk which resembles a green onion. Serving tips: Use the portion of the white base up to where the leaves begin to branch. If slightly dry, soak in warm water to rehydrate. Shred or finely slice and add to soups, curry dishes, and sauces for seafood. More information about lemongrass. |

| Thai Basil, or "horapa" in Thai, has a unique flavor unlike other traditional basil such as Italian. The aroma is stronger, has a sweeter, peppery flavor and comes with hearty purple stems. Often eaten fresh, a great garnish to eat fresh with anything! |

| Kaffir lime leaves add an unmistakable, refereshing taste that is essential in many Thai soups & curries. The combination of lemongrass and lime leaves is a fantastic blast of flavor. The leaves have a strong fragrance and flavor that can not really be substituted. To experience the wonderful aroma, sliver the leaves with a knife or scissors and you'll begin to understand just how wonderful this plant is. Kaffir lime leaves grow in doubles. Sizes vary, but the average individual leaf is approx 2" long. Harvesting is done by hand and it's difficult because the branches have long thorns, so they tend to be expensive and not easily found in supermarkets. Our kaffir lime leaves are strong hearty and fresh. They freeze very well-just place in a ziplock bag & they'll retain their flavor for months. No need to defrost, just use as normal. |

Used in many Thai soups and curries (if you browse our recipe section, you'll find that almost every recipe calls for this product). | Fresh galangal (kha) More about galangal here. This root has a shiny, thin skin and is a relative of ginger but with a much more pungent and fiery flavor. Galanga is native to the cuisines of Thailand, Laos, and Cambodia. It is an important ingredient with lemon grass, chile peppers, shallots, and garlic for Thai curry pastes and soups. Use it sliced and minced to add flavor to stir-frys. Prepare first by scraping off any large protrusions or uneven pieces. Be careful not to use too much galangal, as it can overpower the taste of a dish. Fresh galangal freezes well. We also offer dried galangal. |
