Beef tataki is prepared in different ways, depending on the chef. This is our favorite version, which is simply delicious when you combine rare beef, daikon, tomatoes, onion and ponzu. Try to use excellent ingredients for this salad (the very best quality beef and fresh ingredients). The amount of onions, tomato and daikon to use is really up to you.
Ingredients
Beef (good quality rib roast or prime rib)
Spring onions (green onions)
Fresh beefsteak tomato
Whole white onions
Momijioroshi (grated daikon radish sprinkled with nanami togarashi)
Ponzu sauce
Method
Grill the beef until the meat is hot throughout but still rare (pink), remove from heat and promptly dunk in ice water to stop the cooking. Cover the beef in plastic wrap and put in the fridge to cool. Slice white onion and put in drain in cold water, rinse and place the onions on a plate. Grate daikon radish, sprinkle with nanami togarashi and set aside (this is momijioroshi). Slice tomato and green onions, combine with momijioroshi. Put these ingredients on top of the onions, pour a few tablespoons of ponzu sauce over everything. Slice cold beef thinly and place on top. Serve and enjoy!
