Tom Yum Style Stir-Fried Rice, "Khao Pad Tom Yum"

This recipe is an innovative creation that turns khao pad (fried rice) into a delicious spicy, rich, healthy tom yum. Add more or less fresh chiles to modify heat level. The final result is delicious.
Ingredients
3 cups cooked jasmine rice
5 whole dried chile peppers
3-5 fresh Thai chile peppers (use red color if available)
2 tablespoons thinly-sliced fresh lemongrass
2 tablespoons very finely-sliced fresh galangal
4 kaffir lime leaves, very finely sliced
1-2 tablespoons prik pao (roasted chile paste in soybean oil)
1/2 cup sliced fresh onion
1/2 cup sliced green bell pepper
1/2 cup sliced fresh mushoom
2 tablespoons vegetable oil
2 tablespoons fish sauce
2 tablespoons fresh lime juice
1 cup fresh jumbo shrimp (about 7)
fresh cilantro leaves for garnish
Method
Coarsely chop the whole dried chile then put in a dish with water for 10-20 minutes, then remove and gently squeeze the water out. Put in a mortar and pestle, add fresh Thai chile peppers, and pound them together to mix but don't pound them up too much.
Heat vegetable oil in a wok or skillet, on medium/high heat. Add the pounded chile mixture, prik pao, lemongrass, galangal, and lime leaves. Stir-fry this mixture for a few minutes, then add the fresh vegetables. Fry this for another 3 minutes, then add fresh shrimp. Stir-fry for a few minutes, until the shrimp is cooked, then add cooked jasmine rice together with fish sauce and lime juice. Stir-fry this until the rice turns a consisten color, serve and enjoy!
