Spicy Fried Cashew Nuts, 'Yum Met Mamuang Himaphan'

A simple, elegant appetizer with a uniquely-Thai flair.

Ingredients

3/4 lb cashew nuts
3 spring onions, sliced
3 thai chiles or serrano chiles, sliced
1/2 tsp sea salt
2 cups vegetable oil

Method

Place the oil in a wok over medium heat. When the oil is hot, add the cashews and fry until golden, then remove and drain. Toss the cashews with the spring onion, chile and salt. Serve and enjoy!
