Thai Panang Curry: The Perfect Flavor for Fusion

For years we've seen all kinds of recipes become "Thai" with the addition of some Thai ingredients. Thai potato chips, Thai tacos, Thai cheese puffs, the list goes on and on. After some experimentation, we've decided to recommend using Panang curry paste with pizza and sandwiches to create a fantastic fusion of American and Thai flavors.
Along that theme, here we present two very basic recipes, both using Panang chicken in recipes that aren't typically Thai. Excellent tasting results!
Panang Pizza
Start by making panang chicken, recipe is right here. Modify that recipe by using only 1 tablespoon of panang curry paste, and 1 tablespoon of fish sauce. Also cut the chicken into pieces that are a bit smaller than "bite size", say 1 inch maximum.
After the panang chicken is done, set some of it on a cutting board and cut it into smaller pieces, as shown below.
For the pizza, feel free to make your own crust and sauce but for simplicity in our recipe we used a Chef Boyardee pizza kit in a box. The dough only takes 5 minutes to make and set up. Spread the dough out, add the pizza sauce, then cover the pizza with desired amount of panang chicken. Top with mozzarella cheese and bake according to directions on the box. The final result tastes heavenly. Panang chicken, with it's mix of exotic spices, coconut milk, kaffir lime leaves and Thai basil, really tastes good on pizza. It's like the two things were made for each other.
Panang Lettuce and Tomato Sandwich Here is our version of the Bacon Lettuce and Tomato sandwich. We just used two pieces of plain white bread, put a bit of mayonnaise on one side, and added iceberg lettuce. Next, add the same panang chicken used to make pizza, cover with tomato slices & bread, and you're done. The sandwich is not just interesting, it's downright delicious.
