Thai Fragrant Cookies, 'Kanom Dawk Lamdoowan'

There is nothing quite like the delicious flavor of Thai fragrant cookies, which are made with a simple recipe then flavored with a special herbal candle that emits a heavy fragrant smoke. The candle is made specifically for the purpose of making cookies, and the aroma is unmistakable. We love these cookies and you will too. They go very well with our Thai icecream recipe.

Ingredients

2 cups all-purpose flour
1 egg yolk
3/4 cup sugar (superfine "castor" sugar works best)
9 tablespoons vegetable oil
1 fragrant candle

Method

Mix the flour and sugar in a mixing bowl. Add the egg yolk and gradually knead with vegetable oil until a dough forms. Roll the dough into small balls about 1 inch in diameter. Cut each ball into four wedges, and place each end of three wedges together to form a flower. Cut the remaining wedge in half, roll it into a ball, and place it in the junction of the three wedges to make a flower. Score the center with a knife. If you don't feel comfortable shaping cookies, you can just shape the dough into flattened balls (as picture below). Arrange the cookies on a baking pan. Bake at 300 degrees F for 12 minutes or until the cookies are light gold. Remove from oven, transfer the cookies to cool on a rack.

Light the fragrant candle and put it in a small bowl (as below). Snuff out the candle and promptly place in a large pan with the cookies. Place a lid on the pan and close tightly, and leave to set overnight. It's a good idea to line the top of the lid with foil, as the smoke may cause a deposit.
