Thai Street Vendors: Mini Truck Kitchen Prepares 'Anything You Like'

The two mini-trucks featured here are operated by the same family in the city of Kanchanaburi where they bring their mobilized kitchens to the same place every evening to prepare delicious Thai food from 5:00 PM until after midnight. You'll find them right outside of the city bus station, rain or shine. The father packs and serves the dishes as they fly off the wok, as his three daughters cook nonstop to a steady stream of locals.

There's a green truck and a white truck, as shown, parked perpendicular, along with a cart full of drinks and a few tables next to their cooking area. From the green truck you'll get a delicious Hoi Tod (fried mussel pancake).

The white truck is loaded with ingredients of every kind, including fresh vegetables, beef, chicken and pork hanging on the rack. The sign on the truck states "ahan tahm sahng" which means "we'll make whatever you want". Everything this family makes is delicious and expertly-prepared on several woks that sit between the trucks.

Among the things we ordered from the white truck, shown below is "khai yad sai" which is a savory pancake, or omelet, cooked in a wok, that's then filled with a mixture of fried pork, spices, onion and tomato. Served with ajad on the side (see recipe for ajad) and sriracha sauce. Shrimp is often substituted for pork; also, grated coconut and carrot is often added to the filling of khai yad sai. It's considered a snack food, very popular in Thailand.
