Thai Green Chilli Sauce for Seafood, Dragonfly

We put this on raw oysters (together with a bit of freshly squeezed lemon juice).  So tasty.

This is a traditional Japanese seven-spice blended mixture of red peppers, sansho pepper, roasted orange peel, black and white sesame seeds, seaweed, and ginger. 

We recently enjoyed it with Udon soup, with a piece of barbecued fish to the soup and served it with beer, for a delicious combination.

This is a very interesting, verstale chile oil from Japan that we know you'll like.

It's concentrated so only a few drops does the job. Adds hot flavor.

Young Green Peppercorn - The Secret Garnish

This is a great garnish for seafood, as we show in photos, as well as steaks and lamb.

We lighly seasoned a salmon steak with fish sauce, chopped shallot, garlic and black pepper. Barbecued it then served with vines of young green peppercorn. On each bite of salmon add a pepprcorn or two.

We also seasoned lamb chops with fish sauce, chopped shallot, garlic and black pepper, barbecued and served in the same style.

We enjoyed pan-searing a 4 oz piece of sashimi-grade tuna then served with gently fried yellow onions and black pepper, wasabi and young green peppercorn along with Fosters beer (see photo).

A beautiful presentation that adds fresh taste.
