This delicious, spicy sauce is very easy to make if you have the right equipment, mainly the granite mortar and pestle which does all the work for you.
In just a few minutes you can pound these together and serve generously with sliced beef, as we did here. Also great with spring rolls.
Try to use mostly red chilli peppers.

Rinse your chiles then remove stems.
With stems removed, place them in a mortar and pestle together with a large piece of garlic as shown. Pound for a minute or two, not too much, leave the chillies a bit coarse not a fine paste.
Add some peanuts and pound briefly, not to pulverize the peanuts too much.
In a separate bowl, put about 2 tablespoons of fish sauce and a bit less than 1/2 cup water. Ideally you want 3x the amount of water as fish sauce.
Spoon your chilli peanut mixture into the bowl, mix well then add juice from half of a lime.
This is a delicious sauce that goes well over sliced beef, and salad as shown. Enjoy!
