Radna Wide Noodles in Gravy

This street vendor version differs slightly from how we prepare the same dish, as the street vendor does not use yellow bean sauce or fish sauce. Her version is also heavier to sauce, with less noodles. We encourage you to try this at home and discover the way you like it.

On behalf of Thais, I say you cannot use broccoli or asparagus; lard na is made with chinese broccoli (puk khana) only. We are cooking Thai food here, not "wanna be" thai food. Thx.

To Anonymous Australian: I understand that you object to the seemingly inauthentic ingredients, but you must remember that in foreign places puk khana and many other ingredients are not available to the average person. Better to rejoice that people who are not from your country are trying to make your foods and enjoy them, than to complain about a minor detail. Here in the USA we have a Thai chef who is teaching us via TV how to cook wonderful Thai dishes, and he doesn't hesitate to say, "Hey! If you don't have this, use that; if you don't like it so spicy, put less chili in, and if you mess it up, it doesn't matter...What matters is that you have a good time and be happy!" When we stop having prejudices about food, then perhaps we will also stop having prejudices about people and that would make for a happier world.
