Yakitori is chicken skewered like a kabob with negi (leek) or green onions. The recipe below uses green onions. Yakitori is a great appetizer, and goes great with beer.

- 10 Green Onions
- 1 Tablespoon Sugar
- 2 Tablespoons Sake (Japanese Rice Wine)
- 3 Tablespoons Mirin
- 3 Tablespoons Soy Sauce
- 1 Tablespoon Ginger, Freshly Grated
- Bamboo Skewers
Method for Yakitori
Cut chicken breasts into bite-sized pieces. Prepare a marinade by mixing sugar, ginger, sake, mirin and soy sauce. Marinade the chicken for an hour or so in the fridge. Cut the onions into 1 inch lengths. Skewer the marinaded chicken and onions in alternating order. Grill the skewered chicken over hot coals, basting with marinade until the chicken is cooked. Serve and enjoy!
