Sukhothai Dumpling Soup, Khao Purp

This recipe, known as "Khao Purp" or alternatively "Pra Ruang" is from the Sukhothai area of Thailand.
One cook prepares steamed eggs, as shown in the video, using a cheesecloth stretched over a steaming pot. Another chef gently ladles a mixture of rice flour and water over a cheesecloth, covers it with a basket, then adds bean thread noodles, greens, sprouts and sliced cabbage.
