Our favorite Thai instant noodles, made of pure rice stick noodles.
Made of high quality rice (pho) noodles rather than the typical yellow wheat noodles. Typically these are around 30% more expensive than the yellow wheat-based instant noodles.
This is a delicious soup made by simply adding boiling water, or you can turn it into something extraordinary by adding fresh sliced chile peppers (jalapenos work best), bean sprouts, mint leaves, Thai basil, cilantro, or whatever you prefer.

We also love it with sliced hard-boiled egg. Very aromatic soup that will have your friends and neighbors coming over to ask what's cooking.

HOW TO PREPARE WITH SQUID
Rinse squids, remove tentacles, cut open and remove the guts.
Separately, put the Mama noodles into a bowl of boiling water, add just half of each little packet that comes with the noodles, cover and set aside.
In a small pan, over medium heat, fry the squid in oil together with sliced ginger and shallot. Add crushed black pepper. When the squid is cooked, add to your cooked bowl of noodles together with some rinsed fresh bean sprouts, sliced Thai chilli pepper, and fresh spring onion. Now enjoy -- it's delicious!

HOW TO PREPARE WITH FISH FILLET
We used a nice piece of cod, sliced it as shown, and prepared some fresh ginger & shallots.
In a small pan, over medium heat, fry the shallot and ginger in oil until fragrant. Add fish. Add crushed black pepper. Add a bit of fish sauce. Cover and let cook for a few minutes over low/medium heat. When the fish is cooked, add water to the pan as shown, then add your Mama noodles and half of each little packet that comes in the package. Cook briefly then transfer to a bowl and add with some rinsed fresh bean sprouts and cilantro. Enjoy!
