Railroad Chef Tom Yum Goong
Here is a chef that got his start cooking on trains in the Thai railway system years ago. His wife is shown as well. He says the best tom yum is made with fresh chiles that have been whacked with a cleaver (as demonstrated), adjusting heat by adding more whacked chiles. He says some chefs use pounded chiles, which creates greater heat.
