Quail Eggs Fried in Khanom Krok, Khai Nok Kra-Ta
Here we can see a sidewalk vendor preparing "khai nok kra-ta" (quail eggs) in a khanom krok pan. Quail eggs offer high protein, have a nice aroma, taste great, and are very popular by all people throughout Thailand.
This vendor cooks the eggs over medium heat then gently scrapes them out using the traditional Thai-style stainless steel spoon which has nice thin edges. The eggs are then doused with a few drops of Golden Mountain sauce while still hot, and sprinkled with Thai pepper powder.
