Thai Sweet and Sour Chicken

- 3/4 Pound Sliced Chicken
- 1 Tablespoon Fish Sauce
- 2 Tablespoons Sliced Fresh Ginger
- 1 Cup Sliced Fresh Pineapple
- 1 Cup Fresh Sliced Tomato
- 10 Whole Black Peppercorn
- 1/2 Teaspoon Salt
- 1 Stalk Sliced Spring Onion
- 2 Tablespoons Palm Sugar
- 2 Tablespoons Olive Oil
Method for Thai Sweet and Sour Chicken
Slice chicken, we used boneless thigh, and marinate in fish sauce while the other ingredients are being prepared.
In a frying pan heat fresh ginger in oil then after fragrant add chicken followed by coarsely crushed black pepper (we ground it in a mortar and pestle) followed by kosher salt and sliced green onion.
Add palm sugar and heat over medium/low heat. Add pineapple and tomato, then about 1/4 cup of water. Cover over low heat until chicken is thoroughly cooked.
Transfer to a plate and garnish with fresh cilantro. Serve with Thai jasmine rice. Enjoy!
