Thai Turmeric Shrimp Noodles
We used large pieces of fresh turmeric for this recipe, creating a healthy noodle dish with lovely yellow color.

- 1 Medium Fresh Shallot
- 2 Large Pieces Fresh Turmeric
- 12 Medium Prawns
- 8 Oz Rice Vermicelli
- 1 Teapoon Fish Sauce
- 1 Teaspoon Soy Sauce
- 1/2 Teaspoon Sugar
- 1/2 Teaspoon MSG (optional)
- 5 Sprigs Fresh Cilantro
- 1 Spring Onion
Method for Thai Turmeric Shrimp Noodles
Peel turmeric, slice and pound vigorously in a mortar and pestle.
Boil rice vermicelli, strain and set aside.
Slice fresh shallot and place in a wok or skillet with a bit of vegetable oil. Add prawns and fresh turmeric and stir fry.
Add noodles and mix well, then add fish sauce, soy sauce, sugar and msg. Mix well then add sliced green onion and cilantro.
Serve hot and enjoy!
