Hello Again ! This week we share another summertime favorite - Thai Sticky Rice with Mango.  There are abundant supplies of fresh mangoes in stores, and it's a lot easier to make sticky rice than you might think.

Thai Sweet Sticky Rice with Mango, 'Khao Neeo Mamuang'

A very sweet treat you'll absolutely love. In Thailand some shops exist only to offer sticky rice with mango, in several variations.

Simply soak the rice in water overnight then drain, wrap in cheesecloth, and place in any steamer you have for about 25 minutes.

Here's our recipe including the basic mix of coconut cream, sugar, and tapioca starch.

Based on our understanding, they use a certain variety of sticky rice called "Kao Neeo Keo Ngoo" which means "snake fang sticky rice". This is recognized as a rare, premium variety of sticky rice that's ideal for desserts. Korpanich cooks it to perfection.

This shop has a huge selection of fresh mangos, sold by a separate partner who specializes in that. On the day we visited, they had "oak wrong" variety which is a pure sweet and juicy variety, perhaps the most famous and expensive variety of mango in Thailand. Also available was "nam dokmai" variety which is known as a more fragrant mango, and firm (less juicy, and less sweet than oak wrong). The other variety of mango was "Tong dam" which is a less expensive mango, and a bit sour.

Thai coconut cream, Savoy, 14 oz can

Aroy-D coconut cream in UHT boxes is exceedingly expensive these days but we have good old Savoy in the cans still offered at a price that hasn't changed much so we highly recommend it.  The brand Savoy is reserved for coconut cream, the same company as Aroy-D brand coconut cream. Coconut cream is a top choice for bakers of any dessert recipes that call for coconut milk, and we love coconut cream in khanom krok (see recipes).

This canned coconut cream is all natural and has no preservatives. Ingredients: coconut extract 70%, water.

Please limit purchases to 12 cans, as this is hard to ship in large quantity due to risk of dented cans.
