Thai Bean Thread Beef
Bean thread noodles are healthy and have an enthusiastic following. Here we show how to prepare them quickly in a delicious stir-fry made with sliced beef, and an alternative style made with pork and prawns.

- 1/2 Pound Beef flank or chuck roast
- 3 Tablespoons Sesame Seeds
- 2 Stalks Sliced Spring Onion
- 1 Teaspoon Fish Sauce
- 1/2 Teaspoon MSG
- 10 Whole Black Peppercorn
- 1 Handfull Fresh Bean Sprouts
- 1/4 Sliced Yellow Onion
- 2 Packs Bean Thread
- 1 Teaspoon Sesame Oil
- 1 Garnish Fresh Cilantro
- 1 Tablespoon Chilli Garlic Sauce
Method for Thai Bean Thread Beef
Toast sesame seeds in a dry skillet over medium heat until they turn golden brown then put them in a mortar and pestle, and pound gently. Set aside.
Place bean threads in scalding hot water, cook over low heat for a minute or two, then soak for 5 more minutes.
Slice the green onion as shown then fry in vegetable oil. Add sliced beef to the pan, add ground black pepper, fish sauce, and MSG (optional). Fry for a bit at medium heat then add bean sprouts, bean thread, and sliced yellow onion. Mix this over medium/low heat.
Add sesame oil, about 2 tablespoons of your toasted sesame seed, and fresh cilantro then transfer to a plate. Serve with chilli garlic sauce on the side.
As a nice alternative: we also made this with prawns and sliced belly pork (see photo), instead of beef. Start with a bit of sliced fresh shallots in a pan with vegetable oil, add the prawns and pork, mix well then proceed with bean thread and finish with the same ingredients.
