Kaffir lime leaf adds an unmistakable, refereshing taste that is essential in many Thai soups & curries. The combination of lemongrass and lime leaf is a fantastic blast of flavor. The leaves have a strong fragrance and flavor that can not really be substituted. To experience the wonderful aroma, sliver the leaves with a knife or scissors and you'll begin to understand just how wonderful this plant is. In Thailand the leaves are added to shampoo (said to prevent hair loss) and used as deodorant. Kaffir lime leaves grow in doubles. Sizes vary, but the average individual leaf is approx 2" long. Thai Green Curry Chicken, 'Gaeng Khiao Wan Gai'
This is a simple and authentic Thai recipe that we enjoy preparing with chicken and just a bit of fresh seasonal greens (in this recipe we used green beans). Our basic recipe a delicious green curry with nice flavors that a Thai purist would enjoy. The dish is also made with Thai eggplant or Tiny eggplant.

Squid Pad Ki Mao
Squid Kee Mao is a popular dish served throughout Thailand and it should be served with a high level of chile heat, as we make it here. Use plenty of fresh Thai chile peppers.
For this we use butter to fry the paste, rather than vegetable oil, but you can use either.
Any fresh basil works well, it doesn't have to be the Thai sweet basil variety.
Thai Green Curry Salmon and Wild Rice
For years we've sold Thai green curry paste made of natural spices. Here we've created a very basic Thai green curry, true to authentic flavor but also lacking fiery chile heat because sliced chiles are not added. We ladled the curry over a nice blend of rice and honey-drizzled salmon. We used wild king and sockeye salmon, as shown. You can use any seafood. Salmon is a great choice because honey-flavored salmon tastes so good with the green curry.
We like serving this with a combination of red and jasmine rice, as the wild rice character goes well with seafood.
